It’s me, pigtails flapping in the May breezes, skipping beside Grandma toward the rhubarb patch. Behind Grandma’s house toward the woods a thick nest of rhubarb stalks stands sentinel over a ridge facing the twelve sweet cornfield rows. In her garden, the pinkish-red rhubarb spears get back-row status but I think they are pretty enough for her flower garden out front.

“You said you are stopped up – didn’t have any luck when you went to the bathroom.” Grandma with her sunbonnet and apron pulls off the biggest pinkish-red stalks, the green heart-shaped, crinkly leaves falling to the ground with one swath of her knife. “A dose of this will fix that.” She’s looking intently at the rhubarb but I know she’s talking to me.

I have eaten Grandma’s rhubarb sauce before, but I never thought of it as a laxative. “It has roughage in it. It’ll really clean you out.” She runs her rough hands along the spine of the stalk to show me the fibers.

“I see,” I say but right now I wonder if it tastes as good as it looks, so I bite into a stalk and find out too late that it has plenty of pucker power. “Eeee-ow. It tastes sour,” spitting the mouthful out on the ground.

“Goodness gracious, you have to boil it first in sugar water to make it taste good, don’t ya know!” She giggles at my ignorance and finishes pulling off more rhubarb stems with a twist of her wrist like separating a stalk of celery from the bunch. Then we head back toward her kitchen.

The round, dented aluminum pot is simmering on the stove. With every passing minute the mixture of sugar water and rhubarb cut into 1/2-inch chunks is becoming more ruby red. At the last minute Grandma says, “ Just two shakes,” and I flick my wrist to shake the little can of cinnamon twice as swirls of steam half-scald my hand and wrist.

When it cools, it will taste both tart and sweet. That I know!

What You Might Not Know About Rhubarb

Yes, rhubarb has good cathartic (laxative!) powers, but according to Marion Owen, co-author of Chicken Soup for the Gardener’s Soul, rhubarb is out to save the planet too:

Rhubarb not only saves our plants from aphids, it may also save the planet. In the mid-1980’s, when a hole was discovered in the ozone layer, researchers found that CFC’s were one of the primary reasons for the ozone’s decline.

One of the most common forms of CFC’s is freon, which is used as a refrigerator coolant. Conventional methods for breaking down CFC’s were costly and dangerous. But in 1995, two Yale scientists discovered that oxalic acid, found in rhubarb, helped neutralize CFC’s. Rhubarb to the rescue!

My Little Black Bookends Tell All

Growing up in rural Lancaster County in the 1950s, I had very little opportunity to meet people of other ethnic groups, but I did have a Little Black Sambo book that introduced me to a culture different from mine. So, I have not always been embarrassed by this book. Fascinated, yes, but embarrassed, no. The picture of the tiger running around an African palm tree as the tiger morphed into a golden round pool of butter mesmerized me as a child, butter that would become one of the ingredients of the pancake recipe. The next page shows Black Sambo’s mother Black Mumbo with her glossy brown arm stirring a mound of melted butter making pancakes. The picture made me hungry. And on the last page:

And then they all sat down to supper. Black Mumbo ate twenty-seven pancakes, Black Jumbo ate fifty-five. But little Black Sambo ate a hundred and sixty-nine because he was so hungry!!! (Yes, there are three exclamation marks in the book I am holding.) 

Characters in folktales are typically overblown, with exaggerated details like Little Black Sambo’s super big eyes, through which he gazes at three heaping plates of pancakes with a pot of syrup dribbling all over the table. Obviously, he is ready to stuff his mouth with piles of pancakes.

But there are other tales in the book with the Little Black Sambo cover: The Little Red Hen, The Tale of Peter Rabbit, and The Country Mouse and The Town Mouse. Mr. McGregor and the kitchen maid in the “Mouse” story have white faces, but there is no reference to their whiteness. Their race is assumed as white and therefore not particularly notable.

I paged through this book recently as we cleared out books in Mother’s house and marveled at the stereotypes about black people back then and was embarrassed by it: A black woman with a big butt and goofy name wearing a “maid” cap on her head, black people eating nothing but fried foods, everyone eating too much.

Another find un-earthed in our sifting through “Stuff” – a pair of book-ends I made in school that portrays black children as a novelty.

Interestingly, my niece Shakeeta, my brother Mark’s daughter, choose these as one of the few things she wanted as a remembrance from her Grandma Longenecker’s house. She hoists them up with a smile here:

I guess it’s time I catch up with the times and adjust my ideas about black memorabilia. Singer Anita Pointer certainly has. In an article entitled “A Lesson in History,” (AARP Feb/March 2015) Anita, one of the Pointer Sisters, says she collects black memorabilia so she’ll never forget how her people were once depicted.

We grew up in Oakland, California, but when I was 10 we visited my  grandma in Arkansas. I couldn’t believe how people were living there. They had a white and a black part of town, and you stayed off the white side. At the department store, they had colored and white water fountains. I don’t want to ever forget that’s what it was like for us — and collecting black memorabilia is how I do that.   (66)

Like Whoopi Goldberg and Spike Lee, Anita collects black memorabilia as museum pieces including a “Mammy” cookie jar, and a 1970s John Henry whiskey decanter made by Jim Beam. When the prestigious house of Sotheby’s came to appraise her collection, it took a year to sort and categorize it. She comments, “The appraiser said that I could pretty much charge what I want because most of the pieces are one of a kind.”  In the end, Anita Pointer sees her collection of thousands of pieces as part of her personal history. She doesn’t apologize for any of it.

Of course, I’m hanging onto my Little Black Sambo book. It’s a part of my personal history.

Signs and Wonders: Chincoteague Island

Once upon a time, there were five memoirists who met online through their writing websites. One of them, Janet Givens, who had a rustic log house on Chincoteague Island, Virginia, invited four blogging friends to join her for a writers’ retreat: Kathy Pooler, Joan Rough, Shirley Showalter and me.

According to Janet, “It was grand.” At the end of the week, we all agreed. Now, you ask, what made the week so special?

One fairly warm day, we all took a hike into the Assateague Preserve to see the world-renowned ponies, made famous by Marguerite Henry’s Misty Books. According to one friend’s pedometer, we logged about 3 miles walking the beach and side trails.

After dinner from Tuesday – Saturday, we gathered on the comfy sofa and chairs close to the wood stove. From 7 – 9:30 one of us had the spotlight with an opportunity to get feedback on our writing or blogging. As a beginning memoirist, on Tuesday night, I got clarity about the focus for my story. Distributing a preliminary outline, I asked, “Where in all this muddle is my true story?” Happily, I got wise words from three women who’ve already published memoirs (Kathy, Janet, and Shirley) and one (Joan) with a book poised for publication.

Finally, we gathered again to celebrate the productive week and our deepened friendships as we watched back-to-back episodes of Downton Abbey. As the week ended, we all wrote off into the sunset.

Our story, like Downton Abbey, proceeded in chronological time but with some flashbacks, like many good stories.

My version of The Week at Chincoteague is based on a variation of the story model by PIXAR, the moviemaker who tells perfect stories like Toy Story I and II. At Home with Grandkids: Fun Stuff to Do

It’s cold outside, maybe even Polar-vortex cold, and Saturdays with Grandma or Aunt or Mom will be spent indoors. One cold day three of our grandkids warmed up the house, at least the kitchen, with cupcake baking.

Yes, it’s fun to help mix up the batter and lick the beaters, but the grandest thing is putting the plastic Gerbera daisy in the flower pot or scooping up the “chocolate” dirt. It’s okay that we get frosting all over our arms and face – Grandma doesn’t care, now does she?

Downstairs the grand-kids find the ottoman/toy chest with classics like Lincoln Logs, just like sets from the 1960s but with added plastic gadgets. Tinkertoys – there is just no way to improve on Tinkertoys!

Do you have a deck of jumbo cards? If so, you are in business. Patrick and Curtis both learned the meaning of the expression “house of cards” as they tried to stack playing cards on a shaky foundation. Incredibly they persisted even after a collapse or two. Bryan Berg, who holds the world record for a 75-story card tower, can rest easy. Still, both boys couldn’t enjoy the challenge more, as Patrick illustrates:

Their dad Cliff retooled this marble flick board from an old oaken desk in 1978 when Crista was 9 and Joel, 7. They both competed in “Flick the Marble,” trying to earn the higher number of points, best out of three! All four grandkids have since enjoyed the board. Even grand-nephew Noah and grand-niece Emily give it a whirl here.

WRITE with GRATITUDE

Back in February 2013, when “plain and fancy” launched, the theme of Grah-ti-Tood, announced my first blog post. The grandkids’ gratitude books were featured along with pictures Curtis and Ian had drawn. They are a year older now, and their thanksgiving continues. Sometimes reluctantly. But this time spontaneously, as conversation around the breakfast table last month moved around to things to be thankful for.

On October 25, 2014, Curtis is grateful for friends and thankful that the wars are not hurting me badly (Oh, my)! Ian says, “I am thankful that blueberry pancakes are the best!” Curtis’ illustrations are cartoon-like. Ian’s pancake is realistic with shading.

What’s for Dinner? Dried Beef Gravy and . . .

“Just two generations ago, preparing meals was as much a part of life as eating,” so says Mark Bittman in an article entitled How to Eat Now published in the October 20, 2014 issue of TIME magazine. Although a recent Harris poll reveals that 79% of Americans say they enjoy cooking, probably most get at least a third of their daily calories outside the home. Bittman goes on to show how easy it is to get a nutritious home-cooked meal on the table and includes 3 simple recipes: Vegetable soup which borrows from the freezer aisle, a whole roast chicken with garlic and lemons, and skillet pear crisp recipe which makes for easy cleanup.

Mother of course cooked two main meals every day. I could count on the fingers of one hand the times we ate in a restaurant. Her recipes were hearty, reflective of the PA Dutch cooking she grew up with, never skimping on the butter.

When I came back from Pennsylvania a few weeks ago, I brought on the plane frozen ham loaf and chipped beef. After the ham loaf is thawed, it’s a cinch to pop it into the oven and serve in a few hours with virtually no prep time.

Preparing chipped beef gravy though, while not enormously time consuming, does require assembling ingredients: dried/chipped beef, butter, flour, milk or cream, and a touch of pepper and then stirring in a skillet on the stove.

Last Wednesday, I pulled out my trusty Mennonite Community Cookbook by Mary Emma Showalter, a book of 1100 favorite recipes gleaned from Mennonite families all over the United States and Canada. Usually, I use Mother’s recipe in my head and knowing the ingredients to what she called dried beef gravy I add a hunk of this and two cups of that, “just what you think” as she used to say. This time though I will follow the cookbook’s recipe for creamed dried beef, which I see browns the beef with the butter.

Next I assemble all of the ingredients and fire up the stove, beginning with melting butter in a hot skillet.

Adding the dried beef to the melted butter sends a hearty aroma throughout the kitchen. Then, sprinkling flour over the butter and beef, I create a roux to which I slowly add milk. Depending on your sensitivity to calories, you could use water, milk, or cream. I always use milk. Keep on stirring until the mixture becomes smooth and thick.

Finally, your creamed dried beef, which Mother always referred to as dried beef gravy, is ready to serve over toast, over mashed potatoes, as you wish.

Mark Bittman would probably raise his eyebrows over the amount of butter and flour in the creamed dried beef recipe. And of course this menu is heartier than his lower calorie menu of vegetable soup, roast chicken with pear crisp but, oh, is it delicious!

For years I thought of creamed dried beef as a Pennsylvania Dutch dish. After all, it appeared on page 58 of the Mennonite Cookbook, 1972 edition. Recently, my sister-in-law Terry told me her mother made the same recipe when she was growing up in California.

Family Dinners: Keeping the Spark Alive

Are family dinners important? What about empty nesters? Families of one? Do family dinners protect against the effects of teen drug use and cyberbullying? Writer Melodie Miller Davis in her recent blog post “How do you keep family dinner?” got me thinking about recent research on the topic.

In her post, she refers to Columbia Casa Family Day, a national initiative to remind parents that they have the “power to help keep their kids substance free.” Cornell University researchers also have discovered that shared meals may help prevent eating disorders. An article in Time asserts that teens benefit from interaction with their families and find security in the shared, predictable ritual of family mealtime possibly preventing early drug use and the effects of cyber-bullying. However, there is also research that claims such effects are overstated or not verifiable.

Whatever the case may be, the faster the pace of our lives and the more insane world events become, the more I long for the sweet spaces of serenity that sharing family meals can provide.

The Longeneckers and the Metzlers, two strands of my family line were oblivious of any such research but carried on the ritual of family meal time together. Here is a post from the Metzler gatherings, often picnic style.

Family dinners can be very large as seen here in Grandma and Aunt Ruthie’s house with twenty, mostly Bossler Mennonite Church friends, gathered around their huge dining table.

Whether large or small, indoors or out, dinners require preparation. My sister Jean and her family provide some of the “raw material” from a shared meal at Mother’s house.

Milk Toast: Good for What Ails You

Diners at the Bâtard, an upscale restaurant in Tribeca, NYC can enjoy a dessert dish called milk bread, “A Christmastime treat from Germany,” says the September 1, 2014 issue of the New Yorker. The article goes on to describe this milk bread as having crème-brûlée crackles with innards like French toast or the texture of iced donuts.

My German-Swiss Grandma Longenecker’s milk bread was much simpler. In fact there were only two ingredients: Milk and toast, probably with a little butter. Picture a bowl of warm milk and pieces of toast snippled up making a kind of stew. And she called it milk toast, not milk bread, serving it as a balm for belly aches or whatever else ailed us.

Another milky treat Mother served in the winter-time before school: Hershey’s hot cocoa with buttered toast for dipping. Yes, we dipped the toast in cocoa, inhaled the chocolate fragrance as the warming lump slipped slowly down our throats. Reinforcement for the cold walk to the bus-top. Uh-um, good!

Birthday Butter Shake: A Sequel

You may remember when I visited Pennsylvania last month we made butter the old-fashioned way, my mother, sister and I shaking cream in a 2-quart jar. This week my Southern friend Carolyn threw a birthday bash that included friends making butter together. We did just that – working in pairs, taking turns shaking, and doing it all to music of the 1950s and 60s.

Here is Carolyn explaining how it’s done. Now girls, “Shake the cream until it curdles into butter. Add a pinch of salt. And then to spice it up a notch, choose a combination of honey, cinnamon, mixed herbs, or garlic salt to give your butter some personality . . . .”

Next the ten of us pair off with pint jars of cream, handing off the jar to our mate when our arms are about to fall off . . .

To the tunes of Let’s Have a Party and All Shook Up, we Shake, Rattle, and Roll, way past curds and whey. Finally, with our butter balls all molded and labeled we sit down to a fancy feast, enhanced by the fruits of our labors.

In June, my sister Jan and I visited our Longenecker kin in Elizabethtown and the village of Rheems close by. One morning we took a stroll around the square in E-Town and found that though the town clock was still planted in place, the merchants we knew had disappeared. Dorsheimer’s News, Bishop’s Photography, Moose’s Five & Ten, The David Martin Store, and Zarfoss Hardware had changed into something else entirely: a bakery, a coffee shop, a train specialty store, and further down Market Street, an antique shop about to open.

* Mom’s Rhubarb Sauce Recipe

Soak 5-6 stalks of fresh rhubarb

in water to “cut the bitterness,” Mom says.

Drain off the water.

Add fresh water.

Cut up stalks into 1/2 inch chunks and bring to a boil.

Add sugar to taste   “. . . until it’s sweet enough”

and 2 tablespoons of tapioca  “. . . just what you think,” Mom says.

Mixture will thicken as it cools.
